Now about your dimensions, you are a big Dude! So you need a BIG board, a short board if you have a major read of what is on site is a possibility but in your case remote possibility. You also seem like you think you know the fundamentals but once you get on a board in the water it all changes and you find out what you really know.
I'm gla you are not even considering soft boards as a learning option. I'd look at a good basic longboard at least 9ft and with good volume, go custom if you like but a good suggestion for beginners is to get an off the rack quality brand. It seems you have the cash so you can go that way.
Custom is great but custom is where the surfer knows his stuff and knows what he wants in a board both shape and performance, which is why I suggest an off the racker.
I haven't given you more about dimensions yet as you don't say whether you are fit, where you plan to surf and other than a statement of I know the fundamentals
