I don't know, I would imagine they eventually get close enough to see colors/patterns before actually attacking. Each time an animal attacks, it calculates its risks at least on some basic level (i.e. going after injured prey over healthy prey) so I'm sure they swim around a bit before deciding it's dinner time.

I still think something you can treat your board and wet suit with that transmits an offending odor or taste is probably the best approach. That is, until we invent invisibility converters. merrr
