Where to Surf?

My boyfriend and I did a week surf camp in Costa Rica last November and had a blast. We'd love to do it again and would like to try a new location. We've heard Roatan, Nicaragua, and Panama are all great. Any recommendations as to a location as well as a good company to go with?
