Surfing and working abroad in March – May: Where?

Hi there
I am planning a trip to ?? in March 2018. I'd like to stay for 2–3 months. It won't be holidays though. I want to work from abroad, for which I only need a solid internet connection and a laptop.
Now I wonder where I could find some good surfspots (beginner – intermediate) which are not that crowded (I think I won't check out bali) and where I can get stable internet connection. (Can also be via mobile)

For now I was thinking about New Zealand, Taiwan or Phillipines. Although I'm not sure if I find good internet in the Phillipines.
Any hint or experience is very welcome! Thanks in advance.

Central America....Costa Rica, Nica and Panama are worth considering. A good friend of mine was fired on from the beach (he reckons a 9mm) in El Salvador two years ago so leave that one out. :)

Best time if the year for Australia. Warm water, not too hot. Internet everywhere (of varying speed but it’s stable). Pick large towns or small towns or dots on the map. NSW south coast is beautiful and uncrowded. Although Australia is pretty expensive so there is that.

It’s also a good time in NZ I imagine.

Thanks for the tipps.
I was in South America/Central America once, although not for surfing, but I would like to see something else this time.
Same goes actually for Australia, although I guess for internet this would be a good choice.

What about Indonesia (not Bali, but Lombok) or Taiwan?
