I don't seem to be progressing

Ouch man, you have really gotten your ass handed to you this thread. have you tried a smaller, equally/or more fat and wide board? Since I bought my 5'11 Lost round nose fish, I HATE my longer, thinner 6'3 shortboard.

It's a good point Brian brought up.

When you do make the move to a shortboard, don't aim for length necessarily, but for width + thickness. As Brian said, a fish is an IDEAL board to start with after only surfing longboards.

Make sure you're looking at a board at least 19'' wide in the center, at least 2.5'' thick.

It doesn't sound like you spend a lot of time in the water. Progression at surfing comes from experience and amount of time actually spent in the water catching waves. A person who surfs a few times a week will probably progress more in 6 months than a person who surfs a couple times a month for a couple of years. Age, fitness, and willingness to take advice are also factors that can help improve your surfing ability.

As for surfing other boards, try surfing both shorter and longer boards if you have access to them. This will help you dial in to what's right for you which will in turn help you progress.

How can you still be sane if you don't surf atleast 4-5 times a week?!?!?!?! If I miss one day of surfing I act like a complete jerk and can't think.

I try to surf 4-5 times a week, but sometimes the ocean conspires against me.
