Blueberry Galette!

This morning I made blueberry galettes using fresh berries (photo) and Signora Morini made almond milk ice cream. We made our morning coffee using the beans roasted by one of my buddies that lives in New Mexico. We ground the beans and made the coffee with Signora Morini's made-in-Italy coffee machine. When everything was ready, we enjoyed all these wonderful foods on our patio in our garden. Wow, was it delicious! But wait, it gets even better! All this delicious food was savored after Roxy Ridgeback and I enjoyed miles of beautiful beach along the Gaviota Coast. We had it all to ourselves on a bright blue and sunny day (photo).

Looks good...a little cornstarch mixed in with the berries in the beginning will help thicken the juices as they come out and save the crust from as much leaking....looks tasty though!

You are correct, Big H! Maybe I will try tapioca, xanthum gum, or even potato starch, rather than corn starch, because I am allergic to anything made from corn.

Tapioca and potato starch would be best bets....

Shame about the corn....lots of traces of that in foods in various guises....

You are right about corn in the US: colors, starch, sugar, fructose liquid, etc. And the acute health price is high. Enjoyed living in countries that are not corn crazy like the US. Thanks for the tip for the galette!
