6'3" Sitka shortboard. Al Merrick flyer replica. 19.5" wide and 2.5" thick. brand new condition. ridden twice. FCS G5 fins. board is a medium grey in color and polished fiberglass. $500 with FCS bag and leash or $450 without bag.

How does this look for a guy switching from a 7'6 longboard. It is fairly thick?

Nice board.. you may have some difficulty switching down to a twinny fish from a 7'6". They're much much looser.

You might want to look at a hybrid 3-fin thruster in the 6'6"-6'8" range, or an egg.

but if you're committed to working at it, I'd say go for it.

On re-read; is the fish 6'3"? Or are you looking at two different boards (6' fish and a 6'3" standard thruster)?

Thinking about it.. either would probably be ok for you, though they'll take some getting used to and you'll feel like a grom again for a bit.
