What are the best settings to put a go pro on when surfing?

I always set it to record at the highest FPS and widest angle view. This is so that when you post processing afterwards, you can get the best results.
On a cloudy day, I can't see much difference between 720 and 1080p.

The most important thing when it comes to video is Frames Per Seconds (FPS).
You wont see a huge difference as Banz said between 720p & 1080p, I have a 32gb card in mine, I record at 60fps / 1080p and never manage to fill it up before the battery dies.
videos come out smooth as butter!

The "on",setting is quite useful. As already said max fps. When posting to you tube video size on screen is small so shooting in 720p is fine. 1080p if you intend to play back on a big screen.
