Late December Surf Trip (intermediate) Central America

Hey. Spent some time browsing these forums (apologies for any duplicate posts - I'll scroll through and sure someone will point me in the direction of an identical post) but I'm looking for a Surf Destination with 2 other intermediate surfers for a week. Somewhere we can rent a van and live in hostels/ camp on beaches with some pretty decent surf in Late December.

Flying in from Chicago and/or San Francisco. Looking for some place with good weather, remote beaches, and some consistent surf with a variety of types of breaks.

I spent a few trips in Costa Rica and loved it, but would love an opportunity to get out to a reef break at some point during the trip (I did Cloudbreak in Fiji a while back and it was the most fun day of my life).

Any suggestions for a kook just looking to spend an obscene amount of time on the water for a week?
