Trip in July/August.

Hi all. Looking for advice on a surf trip in July/August that's going to keep the whole family happy. I'm a pretty experienced surfer but don't want anywhere too crowded. My son is a developing surfer and can now cut across on his forehand and backhand so he'ss looking for waves that aren't too challenging and my wife demands sun.
We're looking to go for about 3 weeks in the English school summer holidays. Nicaragua is looking favourite so far but open for suggestions. We've already visited Costa Rica and Sri Lanka.

If you have been to Sri Lanka and Costa Rica (and don't want a return visit) then somewhere Central American sounds perfect.
