I am hoping someone can help me with a bit of a newbie question. I am still using an 8' foam board (I am a very slow learner), is there any reason why I couldn't strap it to the roof rack of a classic mini?

NO reason whatsoever, soft racks roof racks all good!
Have a good tie near the front so there is not too much flap and don't speed

Are there pads on the metal bars of your roof rack ? Or you're going to strap it straight down on the metal bars ?

Which way are you going to orientate the board on the roof ? Deck down/up. Fins front/back ?

I was going to put pads on the bars and put it deck down fins back

Deck Down, Fin Front. Why ? Stick your hand out the window while driving. With fingers parallel to the road and straight into the wind there's not much resistance. Now bend the tips of your fingers down just a tiny bit. Immediately your hand dives down. The tail of your board is straighter into the wind than the rocker of the nose.

How far and fast will you be driving ?

fins front and fins back - its one of the great divides between surfers!

But with a softboard, its definitely worth doing fins front because softboards will bend.

If you strap it on with ratchet straps or similar, just be careful not to pull too tight - plenty of rails dented this way. There are some tricks you can find on the internet

eg - apart from the fins facing back... but notice where the straps go, down the side of the board rather than over the side rails (if you have side rails)

fins front is a good tip and I see your logic, thanks

Just don't strap it too hard, you can permanently damage the rails.
