Hey Caro,
theres a few spots around the mexican riviera that have some good beginner spots, i work on a cruise ship going there right now and we run surf tours in cabo san lucas for begginners and the schools are great with pretty decent begginer boards, and have some more performance orientated boards too. also as you progress there are some better spots too from chest high to overhead in mazatlan and puerto vallarta.
cabo is easily accessable with plenty of hotels, bars, and other activities but might be a little more expensive as it is a popular tourist destination. also avoid march as its spring break and full of drunk college and high school kids....unless thats your thing, then have fun!
hope that helps
