Trading Firewire Addvance for Longer Custom - What Specs?

Hi All,
I've been surfing for 1.5 years now and surf Northern California mostly around SF. I'm 26, 5'11 and 165 lbs. I started off on an 8'0 mini-mal for year and then transitioned to a 6'6 Firewire Addvance (21.5" wide, 3" thick, 48 L). I'm pretty comfortable on the board in terms of catching waves and trimming and attempting bottom turns (at the same level as I was on my 8'0 but having more fun with the maneuverability). I also recently purchased a used 6'1 Lost V3 Rocket (36L, poly) and can catch waves and ride down the line on it as well without too many problems, though not as comfortably as on my Addvance. This is a board I will continue to work with as I progress.
However, I'm starting to think that the exceptional floatiness/volume/epoxy construction of the Addvance combined with the shorter length is making the board too corky for the conditions I ride in. The board sits very high out of the water. Often our conditions are not as clean here and the board seems to bounce around a lot both when paddling out and when riding choppier waves. I'm considering selling the Addvance and purchasing a custom board (or used if I can find the right specs) around 6'10" - 7'0" in length but thinner so that the volume is similar but better distributed. Also would want the board in poly construction as I seem to prefer that in the water feel for our waves here (my 8'0 was poly). I would probably go for a similar shape to the Addvance or maybe a fun gun shape. I had spoken to a local shaper Steve Colletta recently and he had mentinoed the Mahaka Fun Gun, Kestrel or potentially King Fisher could be good designs for me at around 7'0". Funboard shape is probably fine as well.
His designs can be found here:

I was wondering if I could get feedback on sizing and board design I am proposing and if it is even worth the trade. Or is what I am thinking about not going to be much of a difference from what I already have for my conditions?
Thanks guys!
