What happens if water gets thru a ding into the foam of your board?

Your board's knackered.

But what if you didnt notice till you got out of the water? how much damage could be done?

Ah, okay, I'll be a little less concise...
If water gets into the foam, it'll become waterlogged which damages the foam. Often the foam will become discoloured and go yellow (if you have a white, unpainted board). And then the board will be weakened and tends to delaminate.

Depends on how much water got in there - if its a small crack with some water seeping in, then you might get away with drying out the board and then fixing the ding with no problems.
If, on the other hand, you've poured a bucket full of water into the foam of the board, then its doomed.

or.. you could just fix it and hope for the best

i remember one time one of my glassed on fins snapped off and kept on surfing the board that day cas it was a pretty nice day, there was a very tiny hole in the board to the foam but after time by board felt weird,i duno how to explain it. now that board is sitting in my room abasaluty f**ked, its got teeth marks init cas my mate recond he cud bite through it.

i wonder.. why not just cover your whole damn board with suncure so suncure acts like a laminate.. just a thought
