Which one of their longboards is the most versatile? If you had to pick one to do it all, which one would you choose?

Sorry what are you exactly asking about.
What is it you want in the surfboard you would use...
A noserider, an all rounder, a Performer a log style?
How experienced are you and what do you want to do on a board and what are you capable of doing and how versatile are you?
If you can answer those of questions maybe we can recommend somebing for you!

Now you're asking about Bings. But Bings that are single fin good allarounders ?

Hmmm, .........I would recommend the Bing Lovebird.
"Designed in collaboration with Chris Del Moro, the Lovebird is the all-around small to head high wave wizard".

1) Are you riding small to head high waves ? Reef, Beach or Point break ?
2) Can you cross-step and lock down the tail ?
3) Can you do drop-knee turns and fade take-offs ?

Depending on your responses, there are other Bing models. I haven't ridden the Pig Performer, but that one looks fun for being mainly on the tail and grooving.
