Including the 7ft Bic EGG? It's the one I have my heart set on

If you still want to get a 7ft board, then get it. But you are just hampering yourself. Learning to surf isn't that easy - those guys you see flying around on shortboards like its an easy skill have been surfing 20 hours a week since they were 10. Certainly people learn to surf on shorter boards and even boards shorter than 7ft. But all anecdotal evidence is that they take much longer to reach a reasonable skill level.
If you are going to get into surfing, accept that the first board you get wont be your last board. Some people buy and sell 5 boards a year, some people have 8 boards in their house and others 'only' 3 or 4. There is no need to get your 'forever' board as your first board - I absolutely guarantee that, if you keep surfing, in 12-18 months you will start thinking of getting another board no matter what you buy the first time.
I can also guarantee that you will find it easier (not easy, but easier) to learn on a longer board.
