What dimensions for a big guy like me....

Ok so my two boards are my longboard at 9'10 and 3 inch thick and my 7'6 shorter board. My log is pretty much a beater and im ready to get a new one. My question is what dimensions should I get for this board? I will be having the guy who shapped my 7'6 shape this one for me so of course Ill run it by him and his suggestions but I want yalls also. I want this to be a great nose rider. Im 6'4 230lbs so im not little. I was thinking getting it at exactly 10 feet and stick with 3 inch thickness. also keeping it a single fin like my 9'10. So what do yall think?

question - what happened to your 7'10" Quad Fish ?

question - why do you want a noserider ? ( yes, I know, so you can noseride it ) Reason I ask is because I thought you wanted a more maneuverable board ? You wrote "When I say cut I mean cutting back and carving. I can do some on my log but want to do it faster." A true noserider will have soft 50/50 rails which holds the water to the rail, not sheers it off like a hard edged progressive longboard.

question - do you trust your shaper ? The old saying "too many cooks, spoil the pot". You're just going to confuse yourself more. If you get 10 different suggestions on what shape and size you should get, then what ? Worse thing you can say to your shaper is " well, this guy said, I heard that if, I googled blah blah.

Oh I still use that board and really like it. Its for bigger days but I want longboard to replace the one I got. Its for the days that are to small for my 7'6. I just like talking about surfing and researching before I dish out money. I'm no way going to say stuff like that to my shaper.
