Im not too bad at duckdiving and i use my foot, but i was just wondering if you need to have one leg in the air or if it just makes it easier or something?

It helps with balance to extend your back leg. You don't have to do it :-D

I find I chuck my leg in the air automatically to give my other leg more push down on the board.

yeah same here, feels more dynamic and almost comes naturally and ducks do it too :D

Although I can't articulate why, it seems to give me more leverage with my other foot to sink the tail. Might have to do with changing the angle of your hips so that you're more verticle.
